  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme

  • 1/4 teaspoon black pepper
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups green beans, trimmed and cut
  • 1 cup corn kernels
  • 1 cup peas
  • 1 cup diced potatoes

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
  3. Stir in garlic, thyme, basil, salt, and pepper; cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add diced tomatoes, green beans, corn, peas, and potatoes; reduce heat and simmer for 20-25 minutes.
