White Bean Chicken Enchilada Soup

  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup cheese, shredded (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  2. Add shredded chicken, white beans, corn, chicken broth, and enchilada sauce to the pot.
  3. Season with cumin, chili powder, salt, and black pepper. Stir well and bring to a simmer.
  4. Cook for 10-15 minutes, allowing flavors to blend.
  5. Serve hot, topped with shredded cheese if desired.

Notes

  • For a spicier soup, add jalapeños or cayenne pepper.
  • Feel free to customize by adding bell peppers or zucchini.
