- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 2 cups lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups spinach
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic, Italian seasoning, salt, and black pepper. Stir and cook for 1 minute.
- Add shredded chicken and stir to combine.
- Pour in chicken broth and bring to a boil.
- Add broken lasagna noodles and cook according to package instructions until al dente.
- Stir in ricotta cheese, mozzarella cheese, and spinach. Cook until spinach wilts.
- Serve hot, garnished with Parmesan cheese.
Notes
- You can substitute the chicken with turkey or make it vegetarian by using beans.
