White Chicken Lasagna Soup

A creamy and hearty soup that combines all the flavors of classic lasagna in a comforting bowl.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic, Italian seasoning, salt, and black pepper. Stir and cook for 1 minute.
  3. Add shredded chicken and stir to combine.
  4. Pour in chicken broth and bring to a boil.
  5. Add broken lasagna noodles and cook according to package instructions until al dente.
  6. Stir in ricotta cheese, mozzarella cheese, and spinach. Cook until spinach wilts.
  7. Serve hot, garnished with Parmesan cheese.

Notes

  • You can substitute the chicken with turkey or make it vegetarian by using beans.
  • This soup can be frozen for later use; just add a splash of water when reheating.
