A delicious and easy zucchini casserole that combines the flavors of turkey bacon, fresh vegetables, and cheese for a satisfying dish.

  • 4 medium zucchinis, sliced
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the zucchinis, turkey bacon, onion, garlic, oregano, salt, black pepper, and beaten eggs.
  3. Transfer the mixture to a greased baking dish.
  4. Sprinkle the shredded cheddar cheese on top.
  5. Bake for 30-35 minutes, or until the zucchini is tender and the cheese is melted.
  6. Allow to cool for a few minutes before serving.
