Zucchini Noodle Chicken Alfredo

A delicious, guilt-free take on the classic Alfredo pasta, made with zucchini noodles and tender chicken.

Ingredients

  • 2 medium zucchini
  • 1 pound chicken breast
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Spiralize the zucchini to create noodles and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken breast, season with salt and pepper, and cook until no longer pink. Remove from skillet.
  4. In the same skillet, add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and combined.
  5. Return the chicken to the skillet and add zucchini noodles. Toss to coat and heat through.
  6. Serve immediately, garnished with additional Parmesan if desired.
